Gujhiya are deep-fried in low heat oil or ghee, until golden and crisp. Filling of Gujhiya is different from place-to-place according to taste and tradition.
Gujhiya are also known by different names in different regions of India, such as Karanji in Maharashtra, Kajikawa in Andhra Pradesh. They are believed to have originated in Rajasthan, where they are still a popular delicacy. Gujhiya are also associated with the legend of Lord Krishna, who loved to eat them as a child.

Making Gujhiya at home is require time, patience and skill. knead a smooth and elastic dough with flour, ghee, and water, and then roll it into thin circles.
